Adium brings multi-protocol instant messaging to the mac, built on the great work of the Pidgin (formerly Gaim) project, and sporting a very nice and usable interface. It has a very small memory footprint and doesn't get in the way. Also, it's very configurable and makes great use of Growl (a notification framework for the Mac, spun off from the Adium project). There are flaws, for example problems with file transfers, or not displaying the right emoticons in certain cases (and yes, emoticons are very important!).
