Debian is my distribution of choice for a server. It's got an amazing package management system, that handles dependencies, upgrades, uninstallation, etc. flawlessly. The whole distribution is developed incrementally, so doing a dist-upgrade mosly just works. Lots of things are well thought-out in Debian, like the way packages are built and distributed, bug tracking, the placement of files in the filesystem, etc. There have been many times when I saw something and thought "hey, they sure got this thing right". Debian lacks some of the other distributions' polish when it comes to the user interface. It's built by hackers for hackers, and it shows. I wouldn't reccomend Debian for a linux newbie. But if you know your way around, Debian is very flexible and well-designed.
