This wiki has more sophisticated features available but not required to use such as ACL premissions or namespaces. All together, it's great!

DokuWiki
What I liked about DokuWiki from the first moment was the ease of installation. The most neuron consuming thing you have to do is set permissions for some directories. Then the simple, intuitive Markup. Also I just love the use of Namespaces (but this can be confusing for newbies) and the fact that it's file based, so the thing that get stored is the exact thing you typed in. On the downside, DokuWIki doesn’t handle i18n character sets yet and there's no built-in category support.
